We found this recipe in a ward cookbook. We were both hesitant to make it because of all the tomatoes in it. (We don't like tomatoes.) After it all was done, we both agreed that there was not a strong tomato taste and we really want it again.
1 lb hamburger, brown with
1 onion chopped
Add:
1 (15oz.) can tomato sauce
3 cans water
2 cloves garlic, chopped
2 tsp. oregano
2 tsp. salt
1 small can tomato paste
2 TBSP sugar
2 tsp chili powder
2 tsp cumin seed
1/2 c. rice
1 c. corn, drained (optional- I added this just for a little more texture and sweetness)
Bring to boil and simmer on low until rice is done. Put in individual bowls and add toppings of choice--tortilla chips, chopped onions, grated cheese, shredded lettuce, sliced onlives, chopped tomatoes, avocado, sour cream. (Serves 6)
