1/2 cup mayonnaise
2 tsp diced onion or 2 shakes of dried onion flakes
1 TBSP lemon juice
3 hard boiled eggs, minced
1 can cream of chicken soup
2 cup cooked rice
1 cup celery, diced
Mixed all ingredients together. Spread in a greased 9x12 glass baking pan. Bake 375 for 30 minutes. Serves 6.
When I mixed this all together I was kind of nervous of what it may taste like. To my surprise, with a little salt, it was a good simple meal. This is not a fancy meal, but it is a good one if you don't have a lot of money.
